Arugula Salad with Roasted Beets, Goat Cheese and Meyer Lemon Tahiti Dressing

A. Roast 2 red beets and 2 golden beets in the oven at 350 degrees for about 1 to 1.5 hours or until tender. Put out the beets and cool them down

B. Put arugula salad on the serving platter

C. Cut beets in think slices and arrange around the salad

D. Drizzle salad dressing on top of Arugula

E. Put a scoop of goat cheese in the center of the salad

Salad dressing

Combine
1 Myer lemon (can substitute for regular lemon), 1 table spoon of Tahiti, 1 clove of garlic. 1 teaspoon of grated ginger. ½ teaspoon of salt, ¼ teaspoon of black pepper, 7 tablespoons of Flex seed oil, 1 teaspoon of raw apple cider vinegar, and 1 teaspoon of honey.
