Ingredients
1 bunch fresh kale
1 cup walnuts
1 cup olive oil
½ cup fresh-squeezed lemon juice (Meyer is best)
1 tsp. salt (Pink Himalayan is best)
1 clove garlic
Preparation
Separate kale leaves from stems and put leaves in boiling water for 5 minutes. Strain cooked kale and put in food processor. Add walnuts, olive oil, lemon juice, salt and garlic and process for 1 minute till all ingredients blend together. Add fresh lemony flavor to any of your favorite dishes.
(Great with angel-hair pasta.)
